Margaret's Christmas Dinner: Canapés

The following recipes will make great accompaniments to your Christmas dinner, ensuring it comes complete with all the right trimmings. Tasty finger food is also perfect for when you have guests round and want to give them something a bit more substantial than crisps and dips. Here's a few ideas for you to try.

Pigs in Blankets

Ingredients

  • Chipolata sausages  
  • Streaky bacon

Method

  1. Always a favourite, simply wrap strips of streaky bacon around the chipolatas.
  2. Preheat your oven to 180°C and place chipolatas on a lightly greased baking tray and cook in oven for ­­­­­­­­­­35-40 minutes.

 

Chipolatas

Ingredients

  • Chipolata sausages

Method

  1.  Preheat your oven to 180°C and place sausages on a lightly greased baking tray.
  2. Cook for 35-40 minutes.

 

Bacon Rolls

Ingredients

  • Streaky bacon

Method

  1. Roll strips of bacon into spiral wraps.
  2. Place bacon rolls on a lightly greased baking tray and cook in oven at 180°C for 40 minutes.

 

Chicory Leaves with Salsa

  • Chicory leaves

Ingredients for Salsa (vary quantities to taste)

  • Fresh chopped tomatoes
  • Fresh mango, chopped
  • Fresh coriander, chopped
  • Fresh spring onion, chopped
  • Oil
  • Lime juice to taste

Method

  1. Arrange chicory leaves on a large plate.
  2. Combine all salsa ingredients in a bowl and mix well.
  3. Spoon a dollop of salsa mix on to each chicory leaf as desired.
